For the lime crema:

For the lime crema: In a mixing bowl, combine the sour cream, lime juice a few pinches of salt (.5 tsp), whisking together. Taste the mixture and adjust seasoning. Set it aside. Slice the jalapeno thin on a cutting board. Reserve.


In a sauté pan

In a sauté pan, heat the oil and sauté the root vegetables and the garlic together. Season with salt and Ancho chile seasoning to taste. Once mushrooms are cooked and tender, remove from heat.


In another sauté pan

In another sauté pan, heat up 1 TBSP of oil and sauté the corn, poblano and onion mix. Season with salt to taste. This will be your side item, so keep it warm.


Heat the tortillas

Heat the tortillas on a plancha, Comal or in a sauté pan till warmed. Alternatively, you can wrap the tortillas in paper towel and microwave for 12 seconds to warm.


Place tortillas on plate

Place tortillas on plate and spoon in the vegetable mixture. Top with Pickled red onion and drizzle the lime crema with a spoon all over the tacos. Garnish with cotija cheese.
